Castella Cake (Kasutera) Recipe
Ingredients:
- 4 medium eggs (0 points)
- 110g sugar (15 points for 1/2 cup)
- 2 tablespoons honey (4 points)
- 100g strong flour (10 points for 3/4 cup)
Instructions:
- Prepare the Egg Mixture:
- Crack the eggs into a metal bowl, add the sugar, and beat with an electric mixer over a pot of boiling water. Start on high speed for about 6 minutes, until the egg mixture has quadrupled in volume.
- Incorporate the Honey:
- Add the honey to the egg mixture and continue beating on medium speed for 30 seconds until well incorporated.
- Add the Flour:
- Sift 1/3 of the flour into the egg mixture and gently beat on medium speed. Repeat with the remaining flour, mixing until just combined. Avoid over-mixing to prevent the cake from deflating.
- Prepare the Cake Mold:
- Line a rectangular cake mold with parchment paper and pour the batter into it. Use a skewer to draw a zigzag line through the batter to remove any large air bubbles for an even texture.
- Bake:
- Preheat the oven to 180°C (350°F) and bake for 10-15 minutes until the top is deep brown. Then, cover the cake with kitchen paper, reduce the oven temperature to 170°C (340°F), and bake for another 40-45 minutes. The cake is done when a skewer inserted into the center comes out clean.
- Cool and Rest:
- Remove the cake from the pan and immediately cover it with plastic wrap. Place the cake upside down on a flat plate, put it in a plastic bag, and let it rest for 12 hours to achieve a moist texture.
- Serve:
- Trim the sides of the cake before serving. Enjoy it with tea or coffee, and for a touch of indulgence, add a spoonful of fat-free whipped cream.
