- Prepare the Mixture π₯£
In a large bowl, mix together grated sweet potato, zucchini, eggs, flour, Parmesan, green onions, garlic, smoked paprika, salt, and pepper until evenly combined. - Form the Fritters π
Scoop about 2 tablespoons of the mixture and form into small patties (flatten slightly for even cooking). - Cook the Fritters π³
Heat a nonstick skillet over medium heat with 1 tsp oil or spray. Cook fritters in batches, about 3β4 minutes per side, until golden and crisp. Add more oil or spray as needed between batches. - Drain & Serve π§Ί
Transfer to a paper towelβlined plate to remove any excess oil. Garnish with extra green onions and serve warm. Optional: Serve with 0-point Greek yogurt mixed with lemon juice or a light dipping sauce.
