Ingredients:
- 1 ½ cup Kodiak Cakes Protein Pancake Power Cakes Mix
- 1 tsp baking powder
- ½ cup unsweetened applesauce
- ½ cup water (adjust as needed for batter consistency)
- ¼ cup zero-point granulated white sugar substitute (such as Lakanto Monkfruit Sweetener)
- 1 large egg or 2 large egg whites
- 1 cup fresh or frozen blueberries (see notes for frozen blueberries)
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together the egg, water, applesauce, and sugar substitute until smooth.
- Add the Kodiak pancake mix and baking powder to the wet ingredients. Stir until well combined.
- Gently fold in the blueberries. For an extra touch, sprinkle more blueberries on top of the batter before baking, pressing them down slightly.
- Prepare the muffin tin by either spraying with non-stick spray or lining with foil muffin liners (foil works better than paper).
- Divide the batter evenly among the 12 muffin cups.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for 5 minutes before transferring to a cooling rack.
Notes:
- Frozen Blueberries: Thaw completely and dust with flour before adding to the batter to prevent them from sinking and turning the batter purple.
- Storage: Store in an airtight container at room temperature for a day, in the fridge for up to 5 days, or freeze for up to 2 months.
- Sugar Substitutes: The Lakanto Monkfruit Sweetener has a 1:1 ratio with sugar. If you use a different sweetener, adjust accordingly based on the package instructions.
- Extra Protein: For more protein, you can replace ½ cup of the Kodiak mix with ½ cup of protein powder (such as Devotion Angel Food Cake protein powder).
