Weight Watchers Blueberry Muffins

These One Point Blueberry Muffins are a great bariatric-friendly and high-protein option that is perfect for a quick snack or breakfast. With just 65 calories per muffin and 7 grams of protein, they’re sure to be a family favorite while keeping things low in points for Weight Watchers!

Ingredients:

  • 1 ½ cup Kodiak Cakes Protein Pancake Power Cakes Mix
  • 1 tsp baking powder
  • ½ cup unsweetened applesauce
  • ½ cup water (adjust as needed for batter consistency)
  • ¼ cup zero-point granulated white sugar substitute (such as Lakanto Monkfruit Sweetener)
  • 1 large egg or 2 large egg whites
  • 1 cup fresh or frozen blueberries (see notes for frozen blueberries)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together the egg, water, applesauce, and sugar substitute until smooth.
  3. Add the Kodiak pancake mix and baking powder to the wet ingredients. Stir until well combined.
  4. Gently fold in the blueberries. For an extra touch, sprinkle more blueberries on top of the batter before baking, pressing them down slightly.
  5. Prepare the muffin tin by either spraying with non-stick spray or lining with foil muffin liners (foil works better than paper).
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for 5 minutes before transferring to a cooling rack.

Notes:

  • Frozen Blueberries: Thaw completely and dust with flour before adding to the batter to prevent them from sinking and turning the batter purple.
  • Storage: Store in an airtight container at room temperature for a day, in the fridge for up to 5 days, or freeze for up to 2 months.
  • Sugar Substitutes: The Lakanto Monkfruit Sweetener has a 1:1 ratio with sugar. If you use a different sweetener, adjust accordingly based on the package instructions.
  • Extra Protein: For more protein, you can replace ½ cup of the Kodiak mix with ½ cup of protein powder (such as Devotion Angel Food Cake protein powder).
