Recipe: Vegan Oven-Baked Balls

Ingredients:

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup rolled oats
  • 1/4 cup nutritional yeast
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a food processor, combine the chickpeas, cooked quinoa, rolled oats, nutritional yeast, onion, bell pepper, garlic, oregano, basil, smoked paprika, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  3. Transfer the mixture to a large mixing bowl. Add the tomato paste, soy sauce (or tamari), and olive oil. Mix until everything is evenly incorporated.
  4. Using your hands, shape the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, or until the balls are firm to the touch and lightly browned on the outside.
  6. Once cooked, remove the balls from the oven and let them cool for a few minutes before serving.
