Instructions
Prepare the Lentil Filling:
- In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid if necessary.
- While the lentils cook, heat olive oil in a skillet over medium heat. Add the onion and sauté until soft, about 3-4 minutes. Add the garlic and cook for another minute.
- Stir in the tomato paste, cumin, smoked paprika, chili powder, coriander, salt, and pepper. Cook for 1-2 minutes until fragrant.
- Add the cooked lentils to the skillet and mix well to coat with the spices. Cook for an additional 2-3 minutes, stirring occasionally.
Assemble the Tacos:
- Warm the tortillas in a dry skillet or microwave until pliable.
- Spoon a generous amount of the lentil filling onto each tortilla.
- Top with diced tomatoes, red onions, and fresh cilantro.
- Squeeze lime juice over the tacos before serving.
