Vegan Lentil Tacos

Ingredients

Instructions

Prepare the Lentil Filling:

  1. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid if necessary.
  2. While the lentils cook, heat olive oil in a skillet over medium heat. Add the onion and sauté until soft, about 3-4 minutes. Add the garlic and cook for another minute.
  3. Stir in the tomato paste, cumin, smoked paprika, chili powder, coriander, salt, and pepper. Cook for 1-2 minutes until fragrant.

Assemble the Tacos:

  1. Warm the tortillas in a dry skillet or microwave until pliable.

  3. Top with diced tomatoes, red onions, and fresh cilantro.
  4. Squeeze lime juice over the tacos before serving.
