Sweet Potato Fritters with Black Bean Salsa

Ingredients (Serves about 6):

Fritters:
  • 6 tablespoons aquafaba (chickpea water)
  • 2 tablespoons plain flour
  • 1/4 teaspoon ground allspice
  • 250g sweet potato, cleaned and coarsely grated
  • 2 spring onions, finely chopped
  • Salt and pepper, to taste
Salsa:
  • 2 spring onions, finely chopped
  • 1/2 x 400g can black beans (drained and rinsed)
  • 150g cherry tomatoes, quartered
  • 1 small avocado, diced
  • 1 mild chili, finely chopped
  • Juice of 1 lime
  • 2 tablespoons chopped coriander (cilantro)
  • Salt and pepper, to taste

Method:

For the Fritters:

  1. In a large bowl, mix the aquafaba, plain flour, and ground allspice until smooth. Season well with salt and pepper.
  2. Stir in the grated sweet potato and chopped spring onions, mixing until everything is evenly combined.
  3. Heat a little oil in a pan over medium heat. Shape the mixture into patties (around 6 in total) and fry for about 5 minutes on each side until golden brown and cooked through. Drain on a paper towel to remove excess oil.

For the Salsa:

  1. Combine the chopped spring onions, black beans, cherry tomatoes, avocado, chili, and chopped coriander in a bowl.
  2. Squeeze in the lime juice, season with salt and pepper, and gently mix everything together.

To Serve:

Serve the crispy fritters hot with a generous helping of fresh black bean salsa on the side. You could even add a dollop of vegan sour cream or a drizzle of extra lime juice on top for extra zing.
