Ingredients
For the Cabbage Rolls:
- 1 medium green cabbage
- 1 lb lean ground beef (or ground turkey/chicken)
- 1 small onion, finely chopped
- 1 egg
- 1 tsp garlic powder
- Salt & black pepper to taste
- Optional: 1–2 tbsp cooked cauliflower rice (for texture, instead of rice)
For the Sauce:
- 1 can (14 oz) crushed tomatoes (no sugar added)
- 1 tbsp tomato paste
- 1/2 cup water or broth
- 1 tsp paprika
- Salt & pepper to taste
- Optional: a pinch of sweetener to balance acidity (stevia/monk fruit)
Instructions
- Prepare the Cabbage:
Remove the core and place the whole cabbage in boiling water for 8–10 minutes.
As it softens, gently peel off the leaves and set aside. - Make the Filling:
In a bowl, combine:- Ground beef
- Onion
- Egg
- Garlic powder
- Salt and pepper
- (Optional cauliflower rice)
Mix lightly with your hands. Don’t overwork.
- Roll Them:
Place 2–3 tbsp of meat mixture onto each cabbage leaf.
Fold sides inward and roll tightly like a burrito. - Make the Sauce:
Stir together tomatoes, paste, broth/water, paprika, salt, and pepper. - Cook:
Place rolls seam-side down in a baking dish.
Pour sauce over the top.
Cover and bake at 350°F (180°C) for 60–75 minutes.
