Ingredients

For the Cabbage Rolls:

  • 1 medium green cabbage
  • 1 lb lean ground beef (or ground turkey/chicken)
  • 1 small onion, finely chopped
  • 1 egg
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • Optional: 1–2 tbsp cooked cauliflower rice (for texture, instead of rice)

For the Sauce:

  • 1 can (14 oz) crushed tomatoes (no sugar added)
  • 1 tbsp tomato paste
  • 1/2 cup water or broth
  • 1 tsp paprika
  • Salt & pepper to taste
  • Optional: a pinch of sweetener to balance acidity (stevia/monk fruit)

Instructions

  1. Prepare the Cabbage:
    Remove the core and place the whole cabbage in boiling water for 8–10 minutes.
    As it softens, gently peel off the leaves and set aside.
  2. Make the Filling:
    In a bowl, combine:
    • Ground beef
    • Onion
    • Egg
    • Garlic powder
    • Salt and pepper
    • (Optional cauliflower rice)
      Mix lightly with your hands. Don’t overwork.
  3. Roll Them:
    Place 2–3 tbsp of meat mixture onto each cabbage leaf.
    Fold sides inward and roll tightly like a burrito.
  4. Make the Sauce:
    Stir together tomatoes, paste, broth/water, paprika, salt, and pepper.
  5. Cook:
    Place rolls seam-side down in a baking dish.
    Pour sauce over the top.
    Cover and bake at 350°F (180°C) for 60–75 minutes.
