Pineapple Christmas Balls (WW-Friendly, No-Bake)

✅ Ingredients:

  • 1 cup crushed pineapple (drained very well)
  • 1 cup unsweetened shredded coconut (or reduced to 3/4 cup for fewer points)
  • 1/4 cup fat-free Greek yogurt or light cream cheese
  • 2 tbsp zero-calorie sweetener (like Swerve or monk fruit)
  • 1/2 tsp vanilla extract
  • 1/4 cup crushed sugar-free graham crackers or almond flour (for binding, optional)

👩‍🍳 Directions:

  1. Drain the pineapple completely — press out any extra juice using a paper towel or cheesecloth.
  2. In a bowl, mix pineapple, coconut, yogurt (or cream cheese), sweetener, vanilla, and graham cracker crumbs (if using).
  3. Stir until well combined and sticky enough to roll.
  4. Chill the mixture for 20–30 minutes to firm up.
  5. Roll into small 1-inch balls.
  6. Optional: Roll each ball in extra coconut or crushed graham cracker crumbs for decoration.
  7. Refrigerate until ready to serve.

Store in the fridge up to 5 days or freeze up to 1 month.

For a holiday twist, roll them in crushed freeze-dried cranberries or red & green sprinkles (WW-friendly ones).
