Pineapple Christmas Balls (WW-Friendly, No-Bake)

✅ Ingredients:
- 1 cup crushed pineapple (drained very well)
- 1 cup unsweetened shredded coconut (or reduced to 3/4 cup for fewer points)
- 1/4 cup fat-free Greek yogurt or light cream cheese
- 2 tbsp zero-calorie sweetener (like Swerve or monk fruit)
- 1/2 tsp vanilla extract
- 1/4 cup crushed sugar-free graham crackers or almond flour (for binding, optional)
👩🍳 Directions:
- Drain the pineapple completely — press out any extra juice using a paper towel or cheesecloth.
- In a bowl, mix pineapple, coconut, yogurt (or cream cheese), sweetener, vanilla, and graham cracker crumbs (if using).
- Stir until well combined and sticky enough to roll.
- Chill the mixture for 20–30 minutes to firm up.
- Roll into small 1-inch balls.
- Optional: Roll each ball in extra coconut or crushed graham cracker crumbs for decoration.
- Refrigerate until ready to serve.

Add 1 tbsp protein powder to boost protein and make them more filling.
Store in the fridge up to 5 days or freeze up to 1 month.
For a holiday twist, roll them in crushed freeze-dried cranberries or red & green sprinkles (WW-friendly ones).
