Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar substitute (such as erythritol or stevia)
- 2 teaspoons baking powder

- 1 cup unsweetened almond milk
- 1 large egg
- 1 tablespoon unsweetened applesauce
- 1 teaspoon vanilla extract
- Cooking spray
Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar substitute, baking powder, and salt until well combined.
- In a separate bowl, whisk together the unsweetened almond milk, egg, unsweetened applesauce, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray.
- Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges begin to look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, spraying the skillet with cooking spray as needed.
