Low-Carb Cheesy Garlic Breadsticks

Ingredients:

  • 1 1/2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the almond flour, baking powder, garlic powder, and salt.
  3. Add the shredded mozzarella cheese and cream cheese to the bowl. Microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
  4. Once the cheese mixture is smooth, add the eggs and mix until fully incorporated.
  5. Transfer the dough onto the prepared baking sheet. Place another piece of parchment paper on top of the dough and use a rolling pin to flatten it into a rectangle, about 1/4 inch thick.
  6. Remove the top parchment paper and sprinkle the grated Parmesan cheese evenly over the dough.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the breadsticks are cooked through.
  8. Remove from the oven and let cool slightly. Sprinkle with chopped fresh parsley, if desired.
  9. Slice the breadsticks into strips and serve warm.
