Low Carb Beef Nachos

Ingredients:
4 low carb tortillas
Olive oil spray
1 lb ground beef
½ tsp cumin
½ tsp paprika
8 oz low carb salsa
1 cup shredded Mexican blend cheese
¼ cup sour cream
2 tbs pickled jalapeños, optional
2 chopped green onions, optional
Instructions:
Preheat the oven to 350F (180C).
Cut the tortillas into 8 wedges and place them on a baking sheet or silicone mat. Lightly spray with olive oil. Bake for 5 minutes.
Flip the chips over, spray again with olive oil, and bake for an additional 5 minutes or until crispy.
In a pan, brown the ground beef with cumin and paprika.
Drain excess fat from the beef, then add the salsa. Bring to a boil, then simmer for 5-10 minutes.
Place the tortilla chips in a large baking dish and cover with the meat sauce. Add shredded cheese and jalapeños if desired.
Bake for 5 minutes or until the cheese has melted.
Garnish with chopped green onions and dollops of sour cream.
