Loaded Zucchini Bake

This loaded zucchini bake is a simple and tasty way to use up your summer zucchini. It’s topped with cheese, bacon, and green onions for a savory and satisfying dish. You can make it in your oven or air fryer in less than 30 minutes. It’s low-carb, gluten-free, and keto-friendly.


  • 4-6 small sweet peppers (about 1 pound)
  • 1/4 tsp garlic salt
  • 1 cup shredded cheese of your choice (I used cheddar)
  • 1/4 cup crumbled bacon
  • 2 tbsp sliced green onions


  1. Preheat oven to 400°F or air fryer to 375°F. Spray a baking dish or air fryer basket with cooking spray.

  2. Slice zucchini into rounds, about 1/4 inch thick. Arrange them in a single layer in the prepared dish or basket. Sprinkle with garlic salt.

  3. Top with cheese, bacon, and green onions, distributing them evenly over the zucchini slices.

  4. Bake in the oven for 20 minutes or in the air fryer for 15 minutes, or until the zucchini is tender and the cheese is melted.
