Ingredients:
For the Zucchini Patties:
- 2 medium-sized zucchini, grated
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
For Assembling:
- Keto-friendly burger buns or lettuce wraps
- Burger toppings of your choice (lettuce, tomato, onion, cheese, avocado, etc.)
- Keto-friendly mayonnaise or other sauces
Instructions:
- Prepare Zucchini:
- Grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with 1/2 teaspoon of salt, and let it sit for about 10-15 minutes to allow excess moisture to drain.
- Squeeze Out Moisture:
- Squeeze out the excess moisture from the grated zucchini using a clean kitchen towel or paper towels. The drier the zucchini, the better the patties will hold together.
- Make Zucchini Patties:
- In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well until everything is evenly combined.
- Form Patties:
- Divide the mixture into equal portions and shape them into patties.
- Cook Patties:
- Heat olive oil in a skillet over medium heat. Cook the zucchini patties for 3-4 minutes on each side or until golden brown and cooked through.
- Assemble Burgers:
- If you’re using keto-friendly burger buns, toast them lightly. Assemble the burgers by placing the zucchini patties on the buns or lettuce wraps.
- Add Toppings:
- Add your favorite keto-friendly toppings such as lettuce, tomato, onion, cheese, avocado, and any sauces you prefer.
- Serve:
- Serve your Keto Zucchini Burgers immediately and enjoy!
