Keto Strawberry Cream Cheese Cobbler recipe

Ingredients:

  • 2 cups of fresh strawberries, sliced
  • 1/2 cup of granulated erythritol or monk fruit sweetener
  • 1/2 cup of almond flour
  • 1/2 tsp of baking powder
  • 1/4 tsp of salt
  • 1/2 cup of unsalted butter, melted
  • 2 large eggs
  • 1 tsp of vanilla extract
  • 4 oz of cream cheese, softened

Instructions:

  1. Preheat the oven to 350°F.
  2. In a bowl, mix together the sliced strawberries and 1/4 cup of sweetener. Set aside.
  3. In another bowl, whisk together the almond flour, baking powder, salt, and remaining sweetener.
  4. Stir in the melted butter, eggs, and vanilla extract until well combined.
  5. In a separate bowl, beat the cream cheese until smooth and creamy.
  6. Pour the almond flour mixture into a greased 8×8 inch baking dish.
  7. Spoon the cream cheese on top of the almond flour mixture, and spread it out evenly.
  8. Then, spoon the strawberry mixture on top of the cream cheese.
  9. Bake in the oven for 25-30 minutes or until the top is golden brown.
  10. Allow the cobbler to cool for a few minutes before serving.
