Keto Strawberry Cream Cheese Cobbler recipe
Ingredients:
- 2 cups of fresh strawberries, sliced
- 1/2 cup of granulated erythritol or monk fruit sweetener
- 1/2 cup of almond flour
- 1/2 tsp of baking powder
- 1/4 tsp of salt
- 1/2 cup of unsalted butter, melted
- 2 large eggs
- 1 tsp of vanilla extract
- 4 oz of cream cheese, softened

Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix together the sliced strawberries and 1/4 cup of sweetener. Set aside.
- In another bowl, whisk together the almond flour, baking powder, salt, and remaining sweetener.
- Stir in the melted butter, eggs, and vanilla extract until well combined.
- In a separate bowl, beat the cream cheese until smooth and creamy.
- Pour the almond flour mixture into a greased 8×8 inch baking dish.
- Spoon the cream cheese on top of the almond flour mixture, and spread it out evenly.
- Then, spoon the strawberry mixture on top of the cream cheese.
- Bake in the oven for 25-30 minutes or until the top is golden brown.
- Allow the cobbler to cool for a few minutes before serving.
