INGREDIENTS 

  • 1 Can Palmini linguine noodles rinsed and drained
  • 2 Tbsp. Butter
  • 2 tsp. Minced garlic
  • ¼ C. White cooking wine
  • ½ Onion chopped
  • 2 C. Spinach raw
  • 1 C. Heavy whipping cream
  • Salt and pepper to taste

INSTRUCTIONS 

  • Preheat the oven to 400 degrees.
  • Rub the olive oil over the salmon and season with salt and pepper to taste.
  • Sprinkle the garlic powder over the salmon, as well as a squeeze of lemon juice.
  • Bake the salmon for 10-15 minutes until completely done.
  • Let cool and then flake the salmon into pieces.
  • Melt the butter in a skillet over medium heat on the stove.
  • Add in the onions and saute until tender.
  • Stir in the garlic and saute 3 more minutes.
  • Add in the palmini noodles and saute for 5 minutes.
  • Pour in the white cooking wine and cook until the liquid is reduced by half.
  • Stir in the heavy whipping cream and season with salt and pepper to taste.
  • Mix in the spinach until wilted.
  • Stir in the flaked salmon and serve.
