🍗✨ Keto Caramel Chicken
Tender chicken coated in a sticky, sweet-and-savory caramel-style sauce—but made keto-friendly with a low-carb sweetener instead of regular sugar. A typical caramel chicken uses brown sugar, so replacing it is what keeps this version low-carb.
🛒 Ingredients
For the chicken:
- 1½ lb boneless, skinless chicken thighs, cut into bite-size pieces
- 1 tbsp olive oil or avocado oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the keto caramel sauce:
- 3 tbsp allulose or brown-style keto sweetener
- 1 tbsp butter
- 2 tbsp soy sauce or coconut aminos
- ¼ cup chicken broth
- 1 tbsp rice vinegar
- 3 garlic cloves, minced
- 1 tsp fresh grated ginger
- ½ tsp sesame oil
- ¼ tsp red pepper flakes, optional
- ½ tsp xanthan gum, optional, for a thicker sauce
For garnish:
- 2 green onions, sliced
- 1 tsp sesame seeds
- Fresh cilantro, optional
👩🍳 Instructions
- Season the chicken with salt, pepper, and garlic powder.
- Heat the oil in a large skillet over medium-high heat.
- Add the chicken in a single layer. Cook for about 4–5 minutes per side, until golden brown and cooked through. Remove the chicken and set aside.
- Reduce the heat to medium-low and add the butter.
- Add the keto sweetener and cook for 2–3 minutes, stirring constantly, until it melts and becomes syrupy. Allulose works particularly well for a caramel-style sauce.
- Add the minced garlic and ginger. Cook for about 30 seconds.
- Slowly add the chicken broth, soy sauce, and rice vinegar. Stir well, scraping up the browned bits from the bottom of the pan.
- Add sesame oil and red pepper flakes.
- Let the sauce simmer for 3–5 minutes until it starts to thicken.
- If you want a thicker, stickier sauce, mix ½ tsp xanthan gum with a teaspoon of water and whisk it into the sauce gradually.
- Return the cooked chicken to the skillet and toss until every piece is coated.
- Simmer for another 2–3 minutes, allowing the sauce to become glossy and sticky.
- Sprinkle with green onions and sesame seeds.
