Ingredients:
For the Quesadillas:
- 1 pound ground beef
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 4 low-carb tortillas (look for ones made with almond flour or coconut flour)
- 1 1/2 cups shredded cheddar cheese
- 8 slices cooked bacon, crumbled
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion (optional)
- 1/4 cup chopped pickles (optional)
For the Sauce:
- 1/4 cup mayonnaise
- 1 tablespoon mustard
- 1 tablespoon sugar-free ketchup
- 1 teaspoon white vinegar
- Salt and pepper, to taste
Instructions:
- Cook the Ground Beef:
- In a skillet over medium heat, cook the ground beef until browned. Season with salt, pepper, and garlic powder. Drain any excess grease.
- Prepare the Sauce:
- In a small bowl, mix together the mayonnaise, mustard, sugar-free ketchup, white vinegar, salt, and pepper to create the sauce. Set aside.
- Assemble the Quesadillas:
- Lay out the low-carb tortillas on a clean surface.
- Spread a thin layer of the sauce on one side of each tortilla.
- Add Toppings:
- On half of each tortilla, evenly distribute the cooked ground beef, shredded cheddar cheese, crumbled bacon, diced tomatoes, red onion (if using), and chopped pickles (if using).
- Fold and Cook:
- Fold the tortillas in half to cover the filling, creating a semi-circle shape.
- Heat a skillet over medium heat. Place the quesadillas in the skillet and cook for 2-3 minutes on each side, or until the cheese is melted and the tortillas are golden brown.
