These white truffles are a decadent and delicious treat that are keto and low carb friendly. They are made with butter, sugar-free white chocolate, heavy cream, and coconut rum. They are easy to make and perfect for a special occasion.
Ingredients:
125 g of butter
250 g of sugar-free white chocolate (you can use store-bought or make your own with cocoa butter, erythritol, vanilla extract, and sunflower lecithin)
1 tbsp of heavy cream
150 g of heavy cream
2 cl of coconut rum (you can use Malibu or make your own with rum, coconut extract, and erythritol)
Instructions:
Break the sugar-free white chocolate into small pieces and melt it in a double boiler with a tablespoon of heavy cream. Stir occasionally until smooth and glossy.
Remove from the heat and add the butter and coconut rum. Whisk well until well combined.
Whip the remaining heavy cream until stiff peaks form. Gently fold it into the chocolate mixture until well incorporated.
Refrigerate the mixture for at least 2 hours or until firm enough to shape.
Scoop out small balls of the mixture with a spoon or a melon baller. Roll them between your palms to form smooth spheres and place them on a baking sheet lined with parchment paper.
Refrigerate the truffles for another hour or until set.
