Just thought I’d share the cottage cheese mug cake I make every morning. Been trying to recomp (hence the decent 16g protein) and I love ending my breakfast with this!
Ingredients
* 2 tbsp butter
* 3 tbsp cottage cheese (I use Good Culture)
* 1 tsp vanilla extract
* 1 egg
* 1/2 tsp baking powder
* 1.5 – 2 tbsp sweetener (or sweeten to taste!)
* 3 tbsp almond flour

Instructions
- In a small bowl combine the butter and cottage cheese. Melt them in the microwave to help break the curds of cottage cheese. Stir until smooth.
- Add the vanilla extract and egg. Whisk everything up
- Add your baking powder, sweetener, and almond flour. Stir until everything’s all incorporated.
- Pour mixture into a ramekin (or a mug) and put into your microwave. For me, it takes about 3.5 min but obviously this varies by microwave.
- Enjoy! I like topping mine with some whip cream.
