1. Prepare the tomatoes

Wash and dry the tomatoes thoroughly.

Using a sharp serrated or chef’s knife, cut them into ¼–½-inch slices.

For especially juicy tomatoes, place the slices on a plate lined with paper towels for about 2–3 minutes. Lightly pat the tops dry.

Don’t squeeze all the juice out—that tomato juice mixing with the creamy spread is part of what makes this sandwich so good.

2. Season the tomatoes

Arrange the tomato slices in a single layer.

Sprinkle lightly with salt and freshly cracked black pepper.

Let them sit for 3–5 minutes. This brings out the tomato’s natural sweetness and savory flavor.

3. Make the creamy spread

In a small bowl, combine:

  • mayonnaise
  • softened cream cheese
  • lemon juice
  • garlic powder
  • basil or parsley
  • black pepper
  • salt
  • Dijon, if using

Taste and adjust:

  • More lemon → brighter
  • More garlic → stronger savory flavor
  • More mayo → softer and creamier

4. Toast the bread — optional

For the traditional soft sandwich, skip toasting.

For a little more texture, lightly butter a skillet and toast the bread over medium heat for 1–2 minutes per side, just until lightly golden.

Don’t make it extremely crisp—the bread should still have some softness.

Allow toasted bread to cool for a minute before adding the spread.

5. Spread generously

Place the four bread slices on a cutting board.

Spread about 1½–2 tablespoons of the creamy mixture over one side of each slice.

Spread all the way to the edges.

The creamy layer also creates a barrier between the juicy tomatoes and bread.

6. Add the tomatoes

Layer several tomato slices onto two pieces of bread.

Overlap them slightly so every bite contains tomato.

If using basil, tuck a few leaves between the tomato slices.

7. Season again

8. Close the sandwiches
