🥗 Asian Chicken Crunch Salad

This colorful Asian-inspired chicken salad combines tender seasoned chicken, crunchy cabbage, carrots, fresh vegetables, toasted nuts, and a sweet-tangy sesame dressing. It’s fresh enough for lunch but filling enough for dinner.

5. Prepare the vegetables.
While the chicken rests, shred the green and red cabbage. Prepare the carrot, cucumber, green onions, cilantro, and edamame. Place everything in a large salad bowl.

6. Add the crunchy ingredients.
Add the roasted peanuts or cashews and sesame seeds. If using crispy wonton strips, keep them aside until just before serving so they stay crunchy.

7. Slice the chicken.
Cut the rested chicken into thin strips or bite-sized pieces. For the best texture, slice against the grain.

8. Combine the salad.
Add the sliced chicken to the vegetables. Pour about two-thirds of the dressing over the salad and toss thoroughly.

9. Taste and adjust.
