These fudgy, bite-sized protein brownie bombs are an easy chocolate snack made with almond flour, cocoa, protein powder, and nut butter. They can be baked briefly for a soft brownie texture or made as no-bake bites. A similar recipe makes about 12 bites and uses almond flour, cocoa, protein powder, nut butter, and a low-calorie sweetener.

🛒 Ingredients

Makes about 12 brownie bombs

  • ½ cup almond flour
  • ¼ cup unsweetened cocoa powder
  • ¼ cup chocolate or vanilla protein powder
  • ¼ cup erythritol, monk fruit sweetener, or another granulated sweetener
  • 2 tbsp peanut butter or almond butter
  • 2 tbsp unsweetened almond milk
  • ½ tsp vanilla extract
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ¼ cup sugar-free or dark chocolate chips, optional

  • ½ cup sugar-free or dark chocolate chips
  • 1 tsp coconut oil

1. Mix the dry ingredients

In a medium bowl, combine:

  • Almond flour
  • Cocoa powder
  • Protein powder
  • Sweetener
  • Baking powder
  • Salt

Whisk well so there are no lumps of cocoa or protein powder.

2. Add the wet ingredients

Add:

  • Peanut butter
  • Almond milk
  • Vanilla extract

Mix with a spoon or spatula until everything comes together into a thick, fudgy dough.

If the mixture seems too dry or crumbly, add almond milk 1 tablespoon at a time.

If it’s too sticky, add a little almond flour or protein powder.

3. Add chocolate chips

Fold in the chocolate chips if using.

For an extra chocolatey center, you can also place one small chocolate chip in the middle of each ball.

4. Shape the brownie bombs

Scoop approximately 1 tablespoon of mixture for each one.

Roll between your palms to form smooth balls.

You should get around 12 evenly sized brownie bombs.

5. Chill

Place the balls on a parchment-lined plate or tray.

Refrigerate for 20–30 minutes.

Chilling helps them firm up and gives them a fudgier texture.


🔥 Optional Baked Version

If you prefer a slightly firmer, brownie-like bite:

  1. Preheat oven to 350°F (175°C).
  2. Place the shaped brownie bombs on a parchment-lined baking sheet.
  3. Bake for 8–10 minutes.
  4. Remove while the centers are still slightly soft.
  5. Let them cool for about 5 minutes before moving them.

Don’t overbake them—the center should remain soft and fudgy.


🍫 Optional Chocolate Coating

For a more dessert-like brownie bomb:

  1. Melt chocolate chips with coconut oil.
  2. Dip each chilled brownie bomb into the melted chocolate.
  3. Place back on parchment.
  4. Refrigerate for 15–20 minutes, until the coating sets.

You can sprinkle the tops with a tiny amount of flaky salt or chopped nuts before the chocolate hardens.

Store in an airtight container in the refrigerator for up to 5 days. They can also be frozen for about 1 month; let them thaw for a few minutes before eating.

Tip: For the best fudgy texture, I recommend chilling the mixture first and then coating the bombs in dark chocolate.
