Ingredients
Loaf Batter
1½ cups oat flour
1 scoop vanilla protein powder
1 tsp baking powder
3 large eggs
½ cup Greek yogurt
¼ cup honey or sugar-free sweetener
1 tsp vanilla extract
½ cup milk
½ cup dried cranberries
Protein Cheesecake Filling
250g low-fat cream cheese
½ cup Greek yogurt
1 scoop vanilla protein powder
1 egg
2 tbsp sweetener
1 tsp vanilla extract
Instructions
Preheat oven to 175°C (350°F).
Mix all loaf ingredients except cranberries.
Fold in cranberries.
In another bowl, whisk together all cheesecake filling ingredients until smooth.
Pour half the loaf batter into a lined loaf pan.
Add cheesecake filling in the center.
Cover with remaining batter.
Bake for 45–55 minutes until golden and set.
Cool completely before slicing.
