Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Β½ teaspoon chili powder
  • Β½ teaspoon ground coriander
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Cook the Chicken:
    • In a large pot or Dutch oven, add the chicken breasts and pour in the chicken broth. Bring to a boil, then reduce the heat to low. Simmer until the chicken is cooked through, about 15–20 minutes.
  2. Shred the Chicken:
    • Remove the chicken breasts and shred them using two forks. Set aside.
  3. Cook the Onion and Garlic:
    • In the same pot with the broth, add the diced onion and garlic. SautΓ© until the onion becomes translucent, about 5 minutes.
  4. Add Remaining Ingredients:
    • Stir in the shredded chicken, beans, green chiles, cumin, oregano, chili powder, and coriander. Season with salt and black pepper to taste.
  5. Simmer:
    • Reduce heat to low and simmer for 10–15 minutes to allow the flavors to blend. Adjust seasonings as needed.
  6. Serve:
    • Ladle the chili into bowls and garnish with fresh cilantro. Optionally, serve with lime wedges for an extra burst of flavor.
