- 1 lb boneless, skinless chicken breasts
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Β½ teaspoon chili powder
- Β½ teaspoon ground coriander
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (optional, for serving)
Instructions
- Cook the Chicken:
- In a large pot or Dutch oven, add the chicken breasts and pour in the chicken broth. Bring to a boil, then reduce the heat to low. Simmer until the chicken is cooked through, about 15β20 minutes.
- Shred the Chicken:
- Remove the chicken breasts and shred them using two forks. Set aside.
- Cook the Onion and Garlic:
- In the same pot with the broth, add the diced onion and garlic. SautΓ© until the onion becomes translucent, about 5 minutes.
- Add Remaining Ingredients:
- Stir in the shredded chicken, beans, green chiles, cumin, oregano, chili powder, and coriander. Season with salt and black pepper to taste.
- Simmer:
- Reduce heat to low and simmer for 10β15 minutes to allow the flavors to blend. Adjust seasonings as needed.
- Serve:
- Ladle the chili into bowls and garnish with fresh cilantro. Optionally, serve with lime wedges for an extra burst of flavor.
