Zero Point Oat Bread

📝 Ingredients:
✅ 1½ cups old-fashioned oats (or quick oats)
✅ 1 cup fat-free plain Greek yogurt
✅ 2 large eggs
✅ 1 tsp baking powder
✅ ½ tsp baking soda
✅ ½ tsp salt (optional)
✅ Optional: herbs (rosemary, thyme), everything bagel seasoning, garlic powder, etc.
🍞 Instructions:
1️⃣ Preheat oven to 350°F (175°C).
2️⃣ Make oat flour: Place the oats in a blender or food processor and pulse until they become a flour-like consistency.
3️⃣ Mix wet ingredients: In a large bowl, combine Greek yogurt and eggs.
4️⃣ Combine: Add the oat flour, baking powder, baking soda, and salt (plus any optional seasonings). Stir until a thick batter forms.
5️⃣ Bake:
- Line a loaf pan with parchment paper or spray with cooking spray.
- Spread the batter evenly into the pan.
- Bake for 35–40 minutes, until the bread is set and a toothpick comes out clean.
6️⃣ Cool & slice: Let it cool in the pan for 10 minutes, then transfer to a wire rack. Slice into 8 servings.
