- 1 medium zucchini, sliced into half-moons π₯ (0 pts)

- Cook the Sweet Potatoes π
In a large nonstick skillet over medium heat, add olive oil (or spray) and diced sweet potatoes. Cook for 7β10 minutes, stirring occasionally, until beginning to soften. Remove and set aside. - SautΓ© the Beef & Aromatics π₯©
In the same skillet, add the lean ground beef. Cook until browned, breaking up with a spoon. Add diced onion and garlic; cook for 2β3 more minutes. Season with paprika, cumin, salt, and pepper. - Add Zucchini & Combine π₯
Stir in the zucchini and partially cooked sweet potatoes. Cook everything together for 7β8 more minutes, until the vegetables are tender and the flavors meld. - Serve & Garnish πΏ
