🛒 Ingredients
- 250g (9 oz) lean ground beef (93% lean or higher) 🥩 (5–6 pts per serving)

- 1 medium sweet potato, diced 🍠 (2 pts per serving)
- 1 medium zucchini, sliced into half-moons 🥒 (0 pts)
- ½ small onion, diced 🧅 (0 pts)
- 1 garlic clove, minced 🧄 (0 pts)
- ½ tsp paprika 🌶️
- ½ tsp cumin 🌿
- Salt & black pepper, to taste 🧂
- Optional: chopped parsley for garnish 🌿
👩🍳 Directions
- Cook the Sweet Potatoes 🍠
In a large nonstick skillet over medium heat, add olive oil (or spray) and diced sweet potatoes. Cook for 7–10 minutes, stirring occasionally, until beginning to soften. Remove and set aside. - Sauté the Beef & Aromatics 🥩
In the same skillet, add the lean ground beef. Cook until browned, breaking up with a spoon. Add diced onion and garlic; cook for 2–3 more minutes. Season with paprika, cumin, salt, and pepper. - Add Zucchini & Combine 🥒
Stir in the zucchini and partially cooked sweet potatoes. Cook everything together for 7–8 more minutes, until the vegetables are tender and the flavors meld. - Serve & Garnish 🌿
Spoon into bowls and top with fresh parsley if desired. Enjoy warm as-is or serve over a bed of greens or cauliflower rice for 0 extra points!
