For the Crust:

  • 1 1/2 cups chocolate cookie crumbs (You can use chocolate graham crackers or chocolate sandwich cookies)
  • 1/3 cup melted butter
  • 2 tablespoons granulated sugar

For the Filling:

  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups whole milk
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract

For the Topping (optional):

  • Whipped cream
  • Chocolate shavings or grated chocolate

  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized bowl, combine the chocolate cookie crumbs, melted butter, and sugar for the crust. Mix until the crumbs are evenly coated.
  3. Press the crumb mixture into a 9-inch pie dish to create the crust. Make sure it’s firmly packed. You can use the back of a spoon to help with this. Bake the crust for about 10 minutes, then remove it from the oven and allow it to cool.
  4. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt for the filling. Gradually whisk in the milk until the mixture is smooth.
  5. Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. This should take about 10-12 minutes.
  6. In a separate bowl, beat the egg yolks. Gradually whisk about 1 cup of the hot cocoa mixture into the beaten egg yolks to temper them. Then, pour the egg mixture back into the saucepan with the remaining cocoa mixture.
  7. Cook the mixture for an additional 2 minutes, stirring constantly. It should become quite thick.
  8. Remove the saucepan from the heat and stir in the butter and vanilla extract until they are fully incorporated.
  9. Pour the chocolate filling into the prepared crust and spread it out evenly.
  10. Allow the pie to cool at room temperature for about 15-20 minutes, then refrigerate it for at least 2-3 hours, or until it’s well-chilled and set.
  11. When you’re ready to serve, you can top the pie with whipped cream and garnish with chocolate shavings or grated chocolate, if desired.
  12. Slice and enjoy your delicious chocolate pie!
