Cheesy Broccoli Stuffed Chicken Breasts (Weight Watchers Friendly)

  • 4 Boneless skinless chicken breasts
  • 1 tsp. Paprika
  • 1 tsp. Italian seasoning
  • 1 tsp. Salt
  • ½ tsp. Pepper
  • 1 Tbsp. Olive oil
  • 2 C. Broccoli florets, steamed and chopped
  • ¼ C. Minced bell pepper
  • ½ C. Reduced-fat Cheddar cheese, shredded
  • 4 oz. Fat-free cream cheese, softened
  • ¼ C. Parmesan cheese, grated (use the reduced-fat version)
  • 2 tsp. Minced garlic
  • Salt and pepper to taste


  1. Preheat the oven to 400 degrees.
  2. Slice a pocket into the middle of the chicken breasts lengthwise. Be sure not to cut the chicken breasts completely through.
  3. Season both sides of the chicken breasts with the paprika, Italian seasoning, salt, and pepper.
  4. In a bowl, combine the broccoli, bell pepper, reduced-fat cheddar cheese, fat-free cream cheese, grated Parmesan cheese, minced garlic, and salt and pepper to taste.
  5. Stuff the chicken with the broccoli mixture.
  6. Heat the olive oil in a large skillet over medium-high heat on the stove.
  7. Sear both sides of the chicken breasts and place them onto a baking sheet.
  8. Cover the baking sheet with aluminum foil and bake for 20 minutes, or until the chicken is cooked through.
