Cheesy Broccoli Stuffed Chicken Breasts (Weight Watchers Friendly)

Ingredients:
- 4 Boneless skinless chicken breasts
- 1 tsp. Paprika
- 1 tsp. Italian seasoning
- 1 tsp. Salt
- ½ tsp. Pepper
- 1 Tbsp. Olive oil
- 2 C. Broccoli florets, steamed and chopped
- ¼ C. Minced bell pepper
- ½ C. Reduced-fat Cheddar cheese, shredded
- 4 oz. Fat-free cream cheese, softened
- ¼ C. Parmesan cheese, grated (use the reduced-fat version)
- 2 tsp. Minced garlic
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400 degrees.
- Slice a pocket into the middle of the chicken breasts lengthwise. Be sure not to cut the chicken breasts completely through.
- Season both sides of the chicken breasts with the paprika, Italian seasoning, salt, and pepper.
- In a bowl, combine the broccoli, bell pepper, reduced-fat cheddar cheese, fat-free cream cheese, grated Parmesan cheese, minced garlic, and salt and pepper to taste.
- Stuff the chicken with the broccoli mixture.
- Heat the olive oil in a large skillet over medium-high heat on the stove.
- Sear both sides of the chicken breasts and place them onto a baking sheet.
- Cover the baking sheet with aluminum foil and bake for 20 minutes, or until the chicken is cooked through.
