- Zest of one lemon (optional) (0 SmartPoints)
- 2 tablespoons all-purpose flour (4 SmartPoints)
Instructions:
- Preheat the Oven: Preheat your oven to 325°F (160°C).
- Prepare the Crust:
- In a bowl, mix the crushed graham crackers with the melted light butter until the crumbs are evenly coated.
- Press the mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust.
- Prepare the Filling:
- In a large bowl, combine the fat-free cream cheese, fat-free Greek yogurt, and granulated sugar substitute. Mix until well combined.
- Add the vanilla extract and lemon zest (if desired) and mix again.
- Incorporate the Eggs:

- Mix in the all-purpose flour until the mixture is smooth and well combined.
- Pour the Filling:
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake:
- Place the springform pan on a baking sheet (to catch any potential leaks) and then put it in the preheated oven.
- Bake for about 45-50 minutes, or until the edges of the cheesecake are set, and the center is slightly jiggly.
- Cool and Chill:
- Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for about an hour.
- After cooling in the oven, remove the cheesecake from the oven and allow it to come to room temperature.
- Once it’s at room temperature, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight.
- Serve:
- When ready to serve, remove the cheesecake from the springform pan.
- Cut into slices and enjoy.
