Ingredients:
For the Panna Cotta:
- 400 ml light cream (15% fat)
- 200 ml unsweetened almond milk
- 40 g sugar substitute (like Stevia or Monk Fruit)
- 1 teaspoon vanilla extract
- 4 sheets of gelatin (or 1 packet of gelatin powder)
- 50 g dark chocolate (70% cocoa or higher)
For the raspberry sauce:
- 200 g fresh or frozen raspberries
- 1 tablespoon sugar substitute
- 1 teaspoon lemon juice
Instructions:
- Prepare the Gelatin:
- Soak gelatin sheets in cold water for about 5 minutes.
- If using gelatin powder, follow the instructions on the package.
- Panna Cotta Mixture:
- In a large bowl, mix the light cream, almond milk, sugar substitute, and vanilla extract until well combined.
- Divide the mixture in half.
- Chocolate Layer:
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave.

- Refrigerate for another 2-3 hours until fully set.
- Raspberry Sauce:
- In a small saucepan, cook the raspberries, sugar substitute, and lemon juice over medium heat until the raspberries break down, about 5 minutes.
- Press the sauce through a fine sieve to remove seeds (optional).
- Let the sauce cool before drizzling over the Panna Cotta before serving.
