Ingredients:

Instructions:

  1. Prepare the Gelatin:
    • Soak gelatin sheets in cold water for about 5 minutes.
    • If using gelatin powder, follow the instructions on the package.
  2. Panna Cotta Mixture:
    • In a large bowl, mix the light cream, almond milk, sugar substitute, and vanilla extract until well combined.
    • Divide the mixture in half.
  3. Chocolate Layer:
    • Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave.

    • Refrigerate for another 2-3 hours until fully set.
  5. Raspberry Sauce:
    • In a small saucepan, cook the raspberries, sugar substitute, and lemon juice over medium heat until the raspberries break down, about 5 minutes.
    • Press the sauce through a fine sieve to remove seeds (optional).
    • Let the sauce cool before drizzling over the Panna Cotta before serving.
