Chicken Nuggets Salad:
Ingredients:
- 2 cups mixed salad greens
- 1 medium tomato, diced
- 1 small cucumber, sliced
- 1/4 red onion, thinly sliced
- 4 ounces cooked chicken nuggets
- 2 tablespoons low-fat ranch dressing
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F.
- Place chicken nuggets on a baking sheet and bake for 10-12 minutes or until heated through.
- In a large bowl, combine salad greens, tomato, cucumber, and red onion.
- Once chicken nuggets are cooked, remove from oven and chop into bite-sized pieces.
- Add chicken nuggets to the salad and toss to combine.
- Drizzle with low-fat ranch dressing and season with salt and pepper to taste.
