WEIGHT WATCHER CALZONES
Ingredients:
For the Dough (makes 2 calzones):
1 cup self-rising flour (you can use whole wheat or all-purpose)
1/2 cup plain Greek yogurt (0% fat)
1/4 teaspoon salt
For the Filling:
1/2 cup part-skim ricotta cheese
1/2 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup sautéed and drained spinach or other vegetables of your choice
4 ounces lean ground turkey or chicken, cooked and seasoned with Italian spices
1/4 cup marinara sauce (use a low-sugar or sugar-free option)
Salt and pepper to taste
Cooking spray
Instructions:
In a mixing bowl, combine the self-rising flour, plain Greek yogurt, and salt. Mix until the dough comes together.
Turn the dough out onto a floured surface and knead it gently for a few minutes.
Divide the dough into two equal portions and roll each portion into a ball.
Roll out each dough ball into a circle (about 8 inches in diameter) on a lightly floured surface. You can make the circles as thin or thick as you prefer.
In a separate bowl, mix the part-skim ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, sautéed spinach or other vegetables, and cooked ground turkey or chicken. Season with salt and pepper to taste.
Place half of the filling mixture on one half of each dough circle, leaving a small border around the edges.
Fold the other half of the dough over the filling to create a half-moon shape. Press the edges to seal, and you can crimp them with a fork for a decorative touch.
Preheat your air fryer to 370°F (188°C) for a few minutes.
Lightly coat the air fryer basket with cooking spray, then carefully transfer the calzones into the basket.
Cook the calzones in the air fryer at 370°F for about 10-12 minutes, or until they’re golden brown and cooked through.
Serve the calzones with marinara sauce for dipping.
