Vegan Zucchini Pizza Boats

Ingredients:

  • 4 medium zucchinis
  • 1 cup marinara sauce (ensure it’s vegan)
  • 1 cup vegan shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup black olives, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Zucchinis:
    • Wash the zucchinis and cut them in half lengthwise.
    • Use a spoon to scoop out the seeds and some of the flesh to create a boat-like shape.
  3. Season the Zucchinis:
    • Brush the zucchini halves with olive oil.
    • Sprinkle with salt, pepper, garlic powder, dried oregano, and dried basil.
  4. Assemble the Pizza Boats:
    • Place the zucchini halves on a baking sheet lined with parchment paper.
    • Spoon marinara sauce into each zucchini boat.
    • Sprinkle vegan mozzarella cheese on top of the marinara sauce.
    • Add cherry tomatoes, black olives, red onion, and bell pepper.
  5. Bake:
