Vegan Zucchini Pizza Boats
Ingredients:
- 4 medium zucchinis
- 1 cup marinara sauce (ensure it’s vegan)
- 1 cup vegan shredded mozzarella cheese
- 1 cup cherry tomatoes, halved
- 1/4 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Zucchinis:
- Wash the zucchinis and cut them in half lengthwise.
- Use a spoon to scoop out the seeds and some of the flesh to create a boat-like shape.
- Season the Zucchinis:
- Brush the zucchini halves with olive oil.
- Sprinkle with salt, pepper, garlic powder, dried oregano, and dried basil.
- Assemble the Pizza Boats:
- Place the zucchini halves on a baking sheet lined with parchment paper.
- Spoon marinara sauce into each zucchini boat.
