Vegan Wonton Soup

For the Wontons:

  • 1/2 pound (225g) extra-firm tofu, crumbled
  • 1/2 pound (225g) raw shiitake mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 green onion, finely chopped
  • 1 tablespoon soy sauce (or tamari for gluten-free option)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon fresh ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 package vegan wonton wrappers (usually about 40 wrappers)

For the Soup:

  • 8 cups (2 liters) vegetable broth
  • 2-3 slices of fresh ginger
  • 2-3 garlic cloves, smashed
  • 1 green onion, cut into 2-inch pieces
  • Salt and white pepper to taste
  • 1-2 cups bok choy or baby bok choy, chopped (or any greens of your choice)
  • Fresh cilantro leaves, for garnish (optional)


  1. Prepare the Wonton Filling:
    • In a large mixing bowl, combine the crumbled tofu, chopped shiitake mushrooms, minced garlic, chopped green onion, soy sauce, sesame oil, grated ginger, salt, and white pepper. Mix until well combined.
  2. Assemble the Wontons:
    • Place a small spoonful of the filling in the center of each wonton wrapper. Moisten the edges of the wrapper with water, then fold the wrapper over the filling to create a triangle. Press the edges firmly to seal, making sure there are no air pockets. Repeat until all the filling is used up.
  3. Prepare the Soup Base:
    • In a large pot, bring the vegetable broth to a simmer over medium heat. Add the slices of fresh ginger, smashed garlic cloves, and pieces of green onion. Season with salt and white pepper to taste.
  4. Cook the Wontons:
    • Carefully drop the wontons into the simmering broth, making sure they are not sticking together. Cook for about 5-7 minutes, or until the wontons float to the surface and are cooked through.
  5. Add the Greens:
    • Once the wontons are cooked, add the chopped bok choy or baby bok choy to the soup. Cook for an additional 2-3 minutes, or until the greens are wilted and tender.
  6. Serve:
    • Ladle the vegan wonton soup into bowls, making sure to distribute the wontons and greens evenly. Garnish with fresh cilantro leaves if desired, and serve hot.
