Vegan Southern Cowboy Bean Bake

Ingredients:

  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 can (15 oz) of pinto beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 cup of corn kernels (fresh or frozen)
  • 1 can (15 oz) of diced tomatoes
  • 1/4 cup of tomato paste
  • 1/4 cup of maple syrup
  • 2 tablespoons of soy sauce
  • 1 tablespoon of chili powder
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Optional toppings: chopped fresh cilantro, diced avocado, vegan cheese shreds

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the diced onion, minced garlic, and diced bell pepper over medium heat until softened, about 5-7 minutes.
  3. Add the drained and rinsed black beans, kidney beans, and pinto beans to the skillet. Stir well to combine.
  4. Stir in the corn kernels, diced tomatoes, tomato paste, maple syrup, soy sauce, chili powder, smoked paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.
  5. Transfer the bean mixture to a 9×13 inch baking dish, spreading it out evenly.
  6. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until heated through.
  7. Remove the foil and bake for an additional 10 minutes to allow the top to slightly brown.
  8. Once done, remove from the oven and let it cool slightly before serving.
  9. Serve hot, topped with optional toppings like chopped fresh cilantro, diced avocado, or vegan cheese shreds.
