Recipe: Vegan Red Lentil Kebabs


For the Red Lentil Kebabs:
  • 1 cup red lentils, rinsed and drained
  • 2 1/2 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup rolled oats (gluten-free if needed)
  • 1/2 cup chopped fresh parsley
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste
  • Cooking oil for grilling or pan-frying
For the Tahini Sauce:
  • 1/2 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 1 clove garlic, minced
  • Salt and pepper to taste


For the Red Lentil Kebabs:
  1. In a medium saucepan, combine the red lentils and water. Bring to a boil, then reduce the heat to a simmer. Cook for about 12-15 minutes, or until the lentils are soft and most of the water is absorbed. Drain any excess water.
  2. In a large mixing bowl, combine the cooked red lentils, finely chopped onion, minced garlic, rolled oats, chopped fresh parsley, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and pepper.
