Vegan potato pancakes
Ingredients:
- 3 medium-sized potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 2 tablespoons vegetable oil
Instructions:
- In a large mixing bowl, combine the grated potatoes and chopped onions.
- Add the all-purpose flour, cornstarch, baking powder, salt, black pepper, and chopped parsley to the bowl. Mix well until all ingredients are combined.
- Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil to the pan.
- Using a 1/4 cup measuring cup, scoop the potato mixture into the hot pan and press down with a spatula to flatten.
- Cook the pancakes for 3-4 minutes on each side, or until they are crispy and golden brown.
- Repeat the process until all of the potato mixture has been used, adding more vegetable oil to the pan as needed.
- Serve the pancakes hot with your favorite vegan toppings such as vegan sour cream, chives, or applesauce.
