Recipe Details:
- Yield: Serves 4-6
- Preparation Time: 20 minutes
- Cooking Time: 2 hours
- Total Time: 2 hours 20 minutes
Ingredients:
- 2 tablespoons vegan butter
- 1 cup onions, diced
- 5 cloves garlic, minced
- 1/3 cup liquid Aminos
- 1 tablespoon vegan Worcestershire sauce
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon cayenne pepper (optional, adjust to taste)
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1 can of young jackfruit in water or brine, drained and shredded
- 3 cups vegetable stock
- 2 tablespoons cornstarch
- 5 small red potatoes, quartered
- 2 cups carrots, sliced
- 2 ribs of celery, chopped
- 2 cups mushrooms, sliced
Preparation:
- Preheat Oven:
- Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius), ensuring it is ready for baking.
- Sauté Aromatics:
- In a large pot or Dutch oven, melt vegan butter over medium heat. Add diced onions and minced garlic, seasoning with salt. Sauté until onions are soft and translucent.
- Prepare Jackfruit:
- Add shredded jackfruit to the pot, followed by liquid Aminos and vegan Worcestershire sauce. Cook down until the jackfruit begins to absorb the flavors.
- Spice it Up:
- Incorporate red pepper flakes, cayenne pepper (if using), thyme, oregano, sea salt, and onion powder into the jackfruit mixture. Stir well to ensure the spices are evenly distributed.
- Create Stock Mixture:
- In a separate bowl, whisk together vegetable stock and cornstarch until smooth. Pour this mixture into the pot with the jackfruit, stirring to combine. Cover and simmer for 15 minutes to allow the flavors to meld.
- Prepare Baking Pan:
- While the jackfruit simmers, prepare a baking pan by layering quartered red potatoes, sliced carrots, chopped celery, and sliced mushrooms.
- Combine and Bake:
- Once the jackfruit mixture has simmered, pour it over the vegetables in the baking pan. Mix everything together to ensure even distribution. Cover the pan with foil and bake in the preheated oven for 1 hour and 45 minutes, or until the vegetables are tender and the flavors have melded.
- Serve and Enjoy:
- Remove the Vegan Jackfruit Stew from the oven and allow it to cool slightly before serving. Garnish with fresh herbs if desired and enjoy the comforting flavors of this hearty stew.
Additional Notes:
- Adjusting Spice Levels: If you prefer a milder flavor profile, consider reducing the amount of red pepper flakes and cayenne pepper as suggested in the edit. This will allow you to tailor the heat to your personal preference.
- Serving Suggestions: This stew pairs beautifully with crusty bread or fluffy rice, allowing you to soak up every last drop of flavorful broth. Consider serving it alongside a crisp green salad for a well-rounded meal.
