Vegan Okra Patties

Ingredients:

  • 1 lb fresh okra, finely chopped
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped fresh cilantro
  • 1/4 cup chickpea flour (besan)
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2-3 tablespoons oil for frying

Instructions:

  1. Prepare Flax Egg:
    • In a small bowl, mix ground flaxseed with water and set aside for 5-10 minutes to thicken, creating a flax egg.
  2. Combine Ingredients:
    • In a large mixing bowl, combine finely chopped okra, onion, bell pepper, cilantro, chickpea flour, flax egg, minced garlic, ground cumin, ground coriander, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. Form Patties:
    • Using your hands, shape the mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.
  4. Cook Patties:
    • Heat 2-3 tablespoons of oil in a skillet over medium heat. Once the oil is hot, carefully place the okra patties in the skillet, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve:
    • Once cooked, transfer the vegan okra patties to a plate lined with paper towels to absorb any excess oil. Serve hot as a delicious appetizer or side dish. Enjoy!
