Vegan Garlic Parmesan Mushrooms

Ingredients:
- 12 oz. whole mushrooms, cleaned with the stems on or removed
- 2 tbsp olive oil
- 4 tbsp vegan butter, melted
- 3 tsp minced garlic
- 2 tsp Italian seasoning
- Squeeze of fresh lemon juice
- 1/3 cup breadcrumbs
- 1/4 cup nutritional yeast
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400 degrees.
- In a skillet over medium-high heat, add the oil, and sauté the mushrooms cap side down for 2-3 minutes. Season them with salt and pepper to taste.
- Remove the mushrooms from the skillet and place them cap side down in a 9×9 baking dish.
- In a separate bowl, combine the vegan butter, minced garlic, Italian seasoning, and fresh lemon juice.
- Spoon the butter mixture over the mushrooms.
- In another bowl, mix together the breadcrumbs and nutritional yeast.
- Sprinkle the breadcrumb mixture evenly over the mushrooms.
- Bake for 15 minutes or until the mushrooms are tender and the topping is golden brown.
