Vegan Garlic Parmesan Mushrooms

Ingredients:

  • 12 oz. whole mushrooms, cleaned with the stems on or removed
  • 2 tbsp olive oil
  • 4 tbsp vegan butter, melted
  • 3 tsp minced garlic
  • 2 tsp Italian seasoning
  • Squeeze of fresh lemon juice
  • 1/3 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400 degrees.
  2. In a skillet over medium-high heat, add the oil, and sauté the mushrooms cap side down for 2-3 minutes. Season them with salt and pepper to taste.
  3. Remove the mushrooms from the skillet and place them cap side down in a 9×9 baking dish.
  4. In a separate bowl, combine the vegan butter, minced garlic, Italian seasoning, and fresh lemon juice.
  5. Spoon the butter mixture over the mushrooms.
  6. In another bowl, mix together the breadcrumbs and nutritional yeast.
  7. Sprinkle the breadcrumb mixture evenly over the mushrooms.
  8. Bake for 15 minutes or until the mushrooms are tender and the topping is golden brown.
