Ingredients:
- 1 cup chickpea flour
- 1 tablespoon nutritional yeast
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup unsweetened almond milk
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon coconut oil (for cooking)

Instructions:
- In a mixing bowl, combine the chickpea flour, nutritional yeast, cinnamon, and nutmeg.
- Slowly pour in the almond milk while whisking continuously to avoid lumps.
- Add the maple syrup and vanilla extract to the batter, and whisk until smooth and well combined.
- Heat a non-stick skillet or griddle over medium heat and add the coconut oil.
- Pour a portion of the batter onto the skillet, forming a round shape similar to traditional French toast.
- Cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
- Serve the vegan French toast warm, optionally with fresh fruit on top.
