Vegan Comfort Cabbage Soup Recipe
Back in my teenage years, I faced some food challenges, but I’ve come a long way since then. This is my new and improved vegan cabbage soup recipe, which is easy to make and has become quite famous among my friends and family. It’s a comforting and hearty soup that celebrates my journey towards a healthier relationship with food.
Ingredients:
- 1 medium-sized cabbage, thinly sliced
- 1 large potato, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons vegan butter
- 1 can (15 oz) chickpeas, drained and rinsed
- 6 cups vegetable broth
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions:
- In a large soup pot, melt the vegan butter over medium heat.
- Add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent and fragrant.
- Add the diced potato to the pot and continue to cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes or until the potatoes start to soften.
- Add the sliced cabbage to the pot. Stir well and let the soup simmer for an additional 10-15 minutes or until the cabbage is tender.
- Now, toss in the drained and rinsed chickpeas. Cook for another 5 minutes to heat them through.
- Season the soup with salt and pepper to taste.
- Serve your delicious vegan comfort cabbage soup hot, garnished with fresh parsley if desired.
