Vegan Comfort Cabbage Soup Recipe

Back in my teenage years, I faced some food challenges, but I’ve come a long way since then. This is my new and improved vegan cabbage soup recipe, which is easy to make and has become quite famous among my friends and family. It’s a comforting and hearty soup that celebrates my journey towards a healthier relationship with food.

Ingredients:

  • 1 medium-sized cabbage, thinly sliced
  • 1 large potato, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegan butter
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 6 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions:

  1. In a large soup pot, melt the vegan butter over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent and fragrant.
  3. Add the diced potato to the pot and continue to cook for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes or until the potatoes start to soften.
  5. Add the sliced cabbage to the pot. Stir well and let the soup simmer for an additional 10-15 minutes or until the cabbage is tender.
  6. Now, toss in the drained and rinsed chickpeas. Cook for another 5 minutes to heat them through.
  7. Season the soup with salt and pepper to taste.
  8. Serve your delicious vegan comfort cabbage soup hot, garnished with fresh parsley if desired.
