Vegan Classic Whole Roasted Cauliflower

Ingredients:

  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Remove any leaves from the cauliflower and trim the stem so that it sits flat on the baking sheet.
  3. In a small bowl, whisk together the olive oil, paprika, garlic powder, onion powder, ground cumin, ground coriander, salt, and pepper to make the seasoning mixture.
  4. Place the cauliflower head on the prepared baking sheet. Use a pastry brush to coat the cauliflower evenly with the seasoned olive oil mixture, making sure to cover the entire surface.
  5. Roast the cauliflower in the preheated oven for 45-55 minutes, or until it is tender and golden brown on the outside. To check for doneness, insert a knife into the center of the cauliflower; it should pierce through easily.
  6. Once the cauliflower is roasted, remove it from the oven and let it cool slightly.
  7. Garnish with chopped fresh parsley and serve with lemon wedges on the side, if desired.
