Vegan Classic Whole Roasted Cauliflower
Ingredients:
- 1 large head cauliflower
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
- Lemon wedges, for serving (optional)
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Remove any leaves from the cauliflower and trim the stem so that it sits flat on the baking sheet.
- In a small bowl, whisk together the olive oil, paprika, garlic powder, onion powder, ground cumin, ground coriander, salt, and pepper to make the seasoning mixture.
- Place the cauliflower head on the prepared baking sheet. Use a pastry brush to coat the cauliflower evenly with the seasoned olive oil mixture, making sure to cover the entire surface.
- Roast the cauliflower in the preheated oven for 45-55 minutes, or until it is tender and golden brown on the outside. To check for doneness, insert a knife into the center of the cauliflower; it should pierce through easily.
- Once the cauliflower is roasted, remove it from the oven and let it cool slightly.
- Garnish with chopped fresh parsley and serve with lemon wedges on the side, if desired.
