  • Black beans 15 oz.

  • Sea salt 3/4 tsp.
  • Minced garlic 3 cloves
  • Colored peppers 2 cups
  • Zucchini 2 cups
  • Chopped onion 1 cup

Instructions:

  1. Heat your oven to 350.
  2. Add the pepper, zucchini, onion, salt, and garlic to the pan and then saute until it combines well until it becomes soft.
  3. Mix in the cilantro and then cook for 1 minute.
  4. Then add the sauce, black beans, and sour cream and then cook it until it becomes thick.
  5. Take a baking dish and then add the enchilada sauce to the base.
  6. Make enchiladas by adding the stuffing in the center of the tortilla and then place it in the baking dish.
  7. Cover the tortillas with some sour cream and then the sauce.
  8. Moreover, you can spread lime, cilantro, and onions over it.
  9. Bake it for 20 minutes and then it is ready to enjoy.
