Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 4 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro, lime wedges

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Break it into crumbles as it cooks.
  2. Add diced onions to the pot and sauté until the onions are translucent.
  3. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Drain excess fat from the pot.
  5. Add taco seasoning and ranch dressing mix to the beef mixture. Stir well to combine.
  6. Pour in diced tomatoes, diced tomatoes with green chilies, black beans, kidney beans, and corn. Mix thoroughly.
  7. Pour in the broth and bring the soup to a simmer.
  8. Allow the soup to simmer for about 15-20 minutes to allow the flavors to meld. Season with salt and pepper to taste.
  9. Serve hot, garnished with your choice of toppings such as shredded cheese, sour cream, chopped green onions, cilantro, and lime wedges.
