Ingredients:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 4 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro, lime wedges
Instructions:
- In a large pot or Dutch oven, brown the ground beef over medium heat. Break it into crumbles as it cooks.
- Add diced onions to the pot and sauté until the onions are translucent.
- Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
- Drain excess fat from the pot.
- Add taco seasoning and ranch dressing mix to the beef mixture. Stir well to combine.
- Pour in diced tomatoes, diced tomatoes with green chilies, black beans, kidney beans, and corn. Mix thoroughly.
- Pour in the broth and bring the soup to a simmer.
- Allow the soup to simmer for about 15-20 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- Serve hot, garnished with your choice of toppings such as shredded cheese, sour cream, chopped green onions, cilantro, and lime wedges.
