Ingredients: For the crust:

1 1/2 cups almond flour
1/4 cup granulated erythritol
1/4 teaspoon salt
1/3 cup unsalted butter, melted

24 oz cream cheese, softened
3/4 cup granulated erythritol
3 tablespoons coconut flour
3 eggs
1/2 cup sour cream
1/4 cup heavy cream
1 teaspoon vanilla extract

2 cups sliced fresh strawberries
2 tablespoons granulated erythritol
1 teaspoon lemon juice

Instructions:

Preheat the oven to 325°F (165°C).
In a mixing bowl, combine the almond flour, erythritol, and salt. Mix well.
Add the melted butter and stir until well combined.
Press the mixture into the bottom of a 9-inch springform pan. Bake the crust for 15 minutes and then remove it from the oven and set it aside to cool slightly.
In a separate mixing bowl, beat the cream cheese until smooth.
Add the erythritol and coconut flour to the cream cheese mixture and beat until well combined.
Beat in the eggs, one at a time, until fully incorporated.
Add the sour cream, heavy cream, and vanilla extract to the cheesecake mixture and beat until smooth.
Pour the cheesecake mixture over the baked almond flour crust.
Bake the cheesecake for 45-50 minutes or until the center of the cheesecake is almost set.
Remove the cheesecake from the oven and allow it to cool to room temperature before transferring it to the refrigerator to chill for at least 4 hours or overnight.

In a small saucepan over medium-low heat, combine the strawberries, erythritol, and lemon juice. Cook, stirring occasionally, until the strawberries are soft and release their juices, about 15 minutes.
Let the strawberry sauce cool slightly before spreading it over the top of the chilled cheesecake before serving.
