A colorful, filling Mediterranean-style bowl made with caramelized roasted vegetables, creamy hummus, fluffy quinoa, chickpeas, and a fresh lemon-tahini drizzle. The vegetables roast beautifully at high heat, which helps them develop golden, slightly charred edges instead of becoming soggy.

For the roasted vegetables
- 1 medium zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, cut into chunks
- 1Β½ cups cherry tomatoes
- 1Β½ cups broccoli florets
- 1 medium sweet potato, peeled and cut into small cubes
- 1 can (15 oz) chickpeas, drained, rinsed and dried
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Β½ tsp dried oregano
- Β½ tsp cumin
- Β½ tsp salt
- ΒΌ tsp black pepper
- ΒΌ tsp red pepper flakes, optional
For the bowl
- 2 cups cooked quinoa
- 1Β½β2 cups hummus
- Β½ cup cucumber, chopped
- ΒΌ cup Kalamata olives
- ΒΌ cup crumbled feta cheese, optional
- ΒΌ cup fresh parsley
- Lemon wedges
Easy lemon-tahini drizzle
- 3 tbsp tahini
- 2 tbsp fresh lemon juice
- 1 small garlic clove, finely minced
- 3β4 tbsp water
- ΒΌ tsp salt
- ΒΌ tsp black pepper
π©βπ³ Step-by-Step Instructions
1. Prepare the vegetables
Preheat your oven to 425Β°F (220Β°C).
Cut the zucchini, peppers, onion, broccoli and sweet potato into similar-sized pieces so they cook evenly.
Drain and rinse the chickpeas and pat them very dry. This helps them become slightly crispy in the oven.
2. Season everything
Place the vegetables and chickpeas on a large baking sheet.
Add:
- Olive oil
- Garlic powder
- Smoked paprika
- Oregano
- Cumin
- Salt
- Black pepper
- Red pepper flakes
Toss everything really well until evenly coated.

3. Roast

For each bowl:
- Add about Β½ cup cooked quinoa as the base.
- Add a generous spoonful of hummus.
- Arrange the roasted vegetables and chickpeas around the hummus.
- Add fresh cucumber.
- Add Kalamata olives.
- Sprinkle with feta if using.
- Add chopped parsley.
- Drizzle generously with lemon-tahini sauce.
- Finish with a squeeze of fresh lemon.
